That is where the capsule comes in. Horseradish root, nasturtium herb and the fruit of the star anise are concentrated into extracts and combined in a fixed ratio. So three small capsules hold what would otherwise need a grater, a chopping board and a well-stocked garden.

What are glucosinolates?
Glucosinolates are natural sulphur compounds found in brassica plants such as horseradish and nasturtium. They are commonly called mustard oil glycosides and give these plants their sharp taste. The horseradish extract in this product is adjusted to a defined minimum glucosinolate content.
Why an extract rather than dried powder?
An extract concentrates the plant compounds from a larger amount of raw material. The 6–10:1 ratio for horseradish describes how much fresh root goes into one part of extract. Because the horseradish is additionally adjusted to its glucosinolate content, the composition stays more comparable from batch to batch than with plain dried powder.
