Black garlic isn't a separate variety. It's white garlic that has been aged for weeks under controlled warmth and humidity. During this time the Maillard reaction takes place – the cloves turn dark, soft and sweet. The pungent sulphur compounds convert into more stable, water-soluble forms, among them S-allyl-L-cysteine. The typical garlic smell largely disappears.
