The resin of the pistachio tree has been known since time immemorial and found its way into the scent workshops of the incense masters in ancient Egypt over 5,500 years ago. The finest and best quality comes from the Mediterranean island of Chios, where this 5-6m high tree has been cultivated for thousands of years, not least to produce specialties such as resinated wine (Retsina) and delicious baked goods.
