Sodium bicarbonate is a sodium salt of carbonic acid and is one of the hydrogen carbonates. The compound should not be confused with sodium carbonate (soda, molecular formula Na2CO3). Occasionally, the outdated and chemically incorrect trivial names double carbonic soda and sodium bicarbonate are also used for sodium bicarbonate. In the trade, the compound is also offered under the names edible soda, baking soda, food soda as well as the brand names Bullrich salt and Kaiser baking soda. Sodium bicarbonate is a colorless, crystalline solid that decomposes into sodium carbonate above a temperature of 50 °C by splitting off water and carbon dioxide.

Sodium bicarbonate is used in food as a raising agent and in effervescent powders. There is a mixture of baking soda with a solid acid such as citric acid. But it also occurs in bath tablets and in fire extinguishing powders. It is also used in the softening of water. Sodium carbonates include soda (sodium carbonate, disodium carbonate), baking soda (sodium bicarbonate, sodium bicarbonate) and sodium sesquicarbonate, which is a mixed crystal of soda and baking soda. While soda is mainly used to regulate the acidity of drinking water and to digest cocoa and milk protein, baking soda is mainly used in baking soda. Sodium carbonates are degraded by contact with acids. This releases carbon dioxide. As a result, doughs, for example, increase their volume - they rise and become loose.

Excess acid in food is neutralized or attenuated by baking soda. This is important, for example, in the preparation of jams from very sour fruits (sea buckthorn or rhubarb), as they receive a milder taste and therefore less sugar must be used. Accidentally over-added vinegar or lemon juice to a food can also be neutralized by baking soda. When sodium bicarbonate is added, calcium and magnesium ions are precipitated as carbonates from hard water. The softer water can then be separated from the carbonates after sediment formation by pouring, or even before by filtration.
Sodium carbonates are generally authorised for food without a quantitative limit (quantum satis). The only exceptions are untreated and those foods that the legislator does not want to be modified by additives. qs = quantum satis (literally: sufficient quantity). A maximum quantity is not prescribed. However, only as much as is absolutely necessary for the desired effect may be used. Must not get into the hands of children. In case of contact with the eyes, immediately rinse thoroughly with water and consult a doctor. If swallowed, seek medical advice immediately. Irritates the eyes.
